				<content:encoded><![CDATA[<p style="text-align: center;">Are you all ready for Thanksgiving tomorrow? I can&#8217;t wait!! I&#8217;m excited to see family and also devour some delicious turkey dinner.</p>
<p style="text-align: center;">I figured I would link up with the <strong>What I ate Wednesday</strong> <a href="http://www.peasandcrayons.com">group</a> to share my food journal from Monday since I pretty much ate everything in sight that day!</p>
<p style="text-align: center;">Monday morning I woke up starving and the day pretty much continued on that note. My activity has been high lately so I&#8217;m guessing that&#8217;s part of the reason for extra hunger throughout the day.</p>

<p style="text-align: center;">For breakfast I had scrambled <strong>2 eggs, spinach &amp; potatoes</strong>. This meal was filling and so tasty.</p>

<p style="text-align: center;">I headed out the door to go teach Group Power around 710. I left class feeling the need to refuel and I opted for a <strong>Cookie Dough Quest Bar, a banana, and mixed nuts</strong>. This was a well balanced snack and something a little different for me so I liked it!</p>

<p style="text-align: center;">After teaching my Fit For Life class, Ava joined me at my staff pot-luck Thanksgiving lunch at the YMCA. There were TONS of food choices and I filled my plate with a little taste of everything. (<strong>a couple wings, 2 pieces of chicken breast stuffed with stuffing and wrapped in bacon, corn, spinach, broccoli, mashed potatoes, mashed sweet potatoes, fruit, and a chocolate chip cookie</strong>)</p>

<p style="text-align: center;">I dug in and then realized I forgot to snap a picture so you get a partially eaten picture here&#8230; and this was also after Ava&#8217;s little hands messed everything up but you will just have to trust me that it looked pretty before <img src="http://thefitskool.com/wp-includes/images/smilies/icon_wink.gif" alt=";)" class="wp-smiley" /></p>
<p style="text-align: center;">The food was amazing and I left our luncheon wishing we had these pot luck buffets more often!</p>
<p style="text-align: center;">In the afternoon I did my usual computer work for a couple hours until around 230 my stomach was craving something sweet. I quickly toasted a piece of <strong>bread and topped it with peanut butter and sliced strawberries</strong>. If you have never had this before, please try it!</p>

<p style="text-align: center;">Dinner came on the early side and I ate around 5:15. I made a <strong>HELLO FRESH</strong> meal and I was so happy I did. We had <strong>Rosemary basted steak with creamed spinach &amp; rosemary roasted parsnip fries.</strong></p>

<p style="text-align: center;">Like I didn&#8217;t eat enough food throughout the day, at around 9pm my stomach was asking for more&#8230; Marc and I were watching the Patriots game and he decided to make me a game time snack.</p>

<p style="text-align: center;">This week is once again a busy one, but it&#8217;s also a short work week for Marc and I. We have my best friends wedding this weekend and I am super excited for the festivities to begin.</p>
<p style="text-align: center;">I know my blog posts are sporadic these past 2 weeks but hang in there with me, after this weekend I feel like my time is freeing up a bit more!! I feel like every day I have something new and exciting to share with you, its really just finding the time to sit down for 30+ minutes to write out my thoughts, my experiences and my tips with you!</p>

<p style="text-align: center;">I chose Monday because I was busy and on-the-go but I still made health conscious decisions.</p>
<p style="text-align: center;">My morning started off early in preparation for my Group Power class. Monday mornings always feel a bit tougher to get out of bed, but for some reason I woke up before my alarm that morning and I went with it. I quickly got changed made some coffee and started whipping up my breakfast.</p>
<p style="text-align: center;">I had <strong>2 eggs spinach toast homemade pumpkin spice coffee! </strong>It was delicious. This morning was a bit different for me. Ava was still sleeping when I left the house at 710am and I usually get to see her before I leave for work but I didn&#8217;t!! It definitely felt weird, but I was excited to see her after my class when she was playing at daycare <img src="http://thefitskool.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" /></p>

<p style="text-align: center;">After my group power workout I always refuel with a simple <strong>vanilla protein shake</strong> mixed with water.</p>

<p style="text-align: center;">I usually have about an hour to eat a snack and get Ava a snack and changed in between my 2 classes, but it doesn&#8217;t seem like an hour the time flies and we are back at the <strong>YMCA</strong> for my second class (Fit For Life). I really worked them hard on Monday and I could tell by the end everyone was tired but was excited for some of the new exercises we practiced. It was great.</p>
<p style="text-align: center;">For lunch I ate 1/2 of my leftover <strong>chicken marsala with mixed veggies &amp; potatoes</strong>.</p>

My new 21 day challenge started on Monday so I had a lot of stuff to complete and I was thankful for a long nap so I could get everything done <img src="http://thefitskool.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" /></p>
<p style="text-align: center;">My afternoon snack was this yummy <strong>Vanilla Shakeology with Raspberries &amp; more peanut butter</strong>!</p>

<p style="text-align: center;">It was super filling and fueled me for our 30 minute walk with Cooper. By the time I got home I started cooking dinner. Ava didn&#8217;t want to help me so she played with her toys instead.</p>
<p style="text-align: center;">I made another HELLO FRESH meal. It was <strong>Coriander &amp; Cumin crusted chicken with Israeli Couscous salad, roasted zucchini, goat cheese, shallots and caramelized lemon.</strong></p>

<p style="text-align: center;">My taste buds loved this dish and I&#8217;m really loving the new recipes and ingredients I&#8217;m using through this company. I&#8217;ve learned a few new tricks in the kitchen and it really excites me for some future cooking.</p>
<p style="text-align: center;">After dinner Cooper &amp; Ava played in the yard while Marc did some yard work. She loved the leaves and it was nice to be outside on a crisp fall night!! Once Ava was asleep a whole lot of NOTHING and snacked on an<strong> orange &amp; some veggie chips</strong>!</p>

<p style="text-align: center;">The rain is making me not want to leave the house today, but I&#8217;m not going to complain because we had a beautiful summer and we need a little rain right? I guess it&#8217;s supposed to rain all weekend but rainy days are usually the days that I&#8217;m most productive with at home. It&#8217;s good weather to pay bills, catch up on laundry, organization and unwanted cleaning duties. In the end I think I usually feel good about the productivity though.</p>
<p style="text-align: center;">I&#8217;m going to share some <strong>THINGS I&#8217;M LOVING THIS WEEK:</strong></p>
<p style="text-align: center;">First up is that it&#8217;s <strong>October</strong>. There&#8217;s just something about October that I love&#8230; <em>pumpkins, pumpkin spice, apples, more apples, leaves on the ground, pumpkin beer</em>&#8230; oops!</p>

<p style="text-align: center;">This past week we sampled <a href="http://www.hellofresh.com"><strong>Hello Fresh</strong></a>, you can check out <a title="Hello Fresh" href="http://thefitskool.com/?p=8234">my post </a>from yesterday and I can honestly say it was a great change of pace for me with food. I was looking to mix things up and I was able to learn a few new food tricks in the process. It was a great experience!</p>

<p style="text-align: center;"><strong>Cooking Meals with Ava</strong>. I try to cook dinner at home every week night and while some days its a challenge, other days Ava makes it easy and has some fun with me.</p>

<p style="text-align: center;">This week she helped me mash the butternut squash and apple puree I made as a side dish. It&#8217;s the simple things that make her smile and using a masher is quite fun I guess. I think we have a future chef on our hands. I can&#8217;t wait for her to cook me some dinner <img src="http://thefitskool.com/wp-includes/images/smilies/icon_wink.gif" alt=";)" class="wp-smiley" /></p>

<p style="text-align: center;">On Wednesday night before I went to bed I said to Marc&#8230; I would love some <strong>BACON</strong> tomorrow and some <strong>pumpkin coffee</strong>. I&#8217;m so random I know, but guys I love breakfasttttttt. When I woke up and Marc was cooking bacon I knew it was going to be a good day! Especially since I didn&#8217;t have to cook. He&#8217;s the best.</p>

<p style="text-align: center;">On a different note from food, I&#8217;m loving the new training space at the <strong>YMCA</strong>. They added a lot of new equipment like these medicine balls and I am loving using them with my clients and using them for my workouts as well. <strong>Medicine Ball SLAMS</strong> is where its at.</p>

<p style="text-align: center;">My <strong>21 day challenge group</strong> is starting Monday and I&#8217;m super thrilled with the amazing bunch of people I have participating in this group. It&#8217;s a great way to shape up but also learn a few things about health &amp; fitness, the inspiration &amp; motivation is an added plus. I can&#8217;t wait!!!</p>

<p style="text-align: center;">I&#8217;m definitely excited the fall has officially begun and the weather is cooling down so I can turn the oven on and roast some fall veggies. It might be my favorite season for produce.</p>
<p style="text-align: center;">This post is coming late&#8230; because you know sometimes technology does bad things to you and deletes your whole post when you literally were about to hit the publish button. I wanted to scream but instead took a deep breath and reminded myself its not the end of the world and I could re-write it in a jiffy.. Well not that quick but here goes&#8230;..</p>

<p style="text-align: center;">Last week my friend suggested that I try out a company called <strong><a href="http://www.hellofresh.com">HELLO FRESH</a>.</strong> I was so excited when our package arrived.<strong> </strong>Hello Fresh delivers delicious &amp; healthy recipes to your door each week and the best part is everything is pre measured so all you have to do is follow the instructions and your meal is ready!</p>

I apologize for not posting the last couple of days but life gets in the way sometimes. I do miss talking to you guys but I&#8217;m here today and I&#8217;m going to share some of my &#8220;food journal&#8221; with you!</p>

<p style="text-align: center;">My morning started off with a glass of water and a homemade cup of pumpkin spice coffee!! I made a quick breakfast with <strong>2 eggs in coconut oil, spinach &amp; a piece of whole grain toast</strong>. It was simple &amp; delicious.</p>

<p style="text-align: center;">I was at the <strong>YMCA</strong> early for a meeting and then did some computer work.</p>
<p style="text-align: center;">My mid-morning snack was a <strong>bowl of oatmeal with almond milk, peanut butter &amp; strawberries</strong>! I can&#8217;t get sick of this snack&#8230; seriously I could eat it every day! It tastes like peanut butter and jelly in a bowl.</p>

<p style="text-align: center;">I continued to do some more computer work and then built up a lunch appetite. This was random lunch<strong> 2 mini turkey burgers in lettuce wraps with tomatoes &amp; mustard plus a Sweet Potato &amp; Spinach burger</strong>. The Sweet potato burger stole the show.</p>

Marc and I decided to try out <a href="http://hellofresh.com">Hello Fresh</a> which is a company that delvers delicious &amp; healthy recipes all with pre measured ingredients to your door each week <img src="http://thefitskool.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" /> So far our first 2 meals were amazing. I will be giving a review tomorrow for you guys! Last night we had <strong>Steak with a Horseradish cream sauce and root veggies with rosemary (carrots &amp; parsnips)</strong>! It was a great pre-workout meal.</p>
