				<content:encoded><![CDATA[<p style="text-align: center;"><em>Are you one of those people that tries new foods &amp; flavors or do you stick to the same boring foods day in and day out?</em> I used to be a plain Jane but I have expanded my taste buds and I have Marc to thank for that.</p>
<p style="text-align: center;">When we first met, the closest I got to eating seafood was fish sticks. Now I will eat any type of fish and even mussels and stuffed clams.</p>
<p style="text-align: center;">Growing up I hated mushrooms, now I love them! You can literally make me stuffed mushrooms any day and I will eat them. Brussel Sprouts, yuck… I used to think they were so bitter. Now I would eat them as a snack if you put them in front of me! The first time I had salmon I literally gagged and now it is has become a weekly dinner staple in our house.</p>
<p style="text-align: center;">Sometimes it takes me a few tries to like something but I am happy to try most foods a second time around.</p>
<p style="text-align: center;">Growing up I always knew what Fennel was but the licorice taste was just gross to me. This was until Marc threw together this lovely side dish using fennel &amp; apples which compliment each other so well in this dish. I couldn’t put my fork down!!! <strong>I asked him to make it again and again, </strong>apparently I&#8217;ve asked so much that now when Fennel is on sale he will buy it make the salad because he knows how much I love it.</p>
<p style="text-align: center;">This past weekend I came home to Marc making it and I decided it was time to share these flavors with you!</p>
<p style="text-align: center;">If you love the tartness of a granny smith apple and the tang from lemon juice I promise you will think of Fennel in a different way!</p>

<p style="text-align: center;">1 Head Fennel</p>
<p style="text-align: center;">1 Granny Smith Apple</p>
<p style="text-align: center;">2 tsp Olive Oil</p>
<p style="text-align: center;">1/2 lemon, juiced</p>
<p style="text-align: center;">1/4 tsp Thyme</p>
<p style="text-align: center;">Salt &amp; Pepper</p>

				<content:encoded><![CDATA[<p>I love my job and I enjoy each day that I am teaching and training&#8230; but relaxing at the beach and having no set agenda was quite enjoyable. I am back from my mini <strong>YMCA</strong> vacation and it sure felt good to teach <strong>Group Power</strong> this morning after a week off.  I was feeling strong and decided to lift heavier on some of the tracks. I am sure I will be sore tomorrow!</p>
<p>This weekend like all weekends flew by. We had several parties on <strong>Saturday</strong>&#8230; one was a 1 year old bday party and another was a party for my friend who got married back in June. Both were fun and the weather turned out great!</p>
<p><strong>Sunday</strong> was a beach day for us&#8230;</p>

<p>We got up early, walked Cooper grabbed some coffees on our walk and then headed to the beach mid-morning. Ava loves it!</p>

<p>She was on the look out for seagulls. I am pretty sure she is the only person on the beach that likes them!</p>
<p>In the afternoon we did some stuff around the house and I completed a <strong>T-25 Cardio</strong> workout. T-25 has become my go to sunday afternoon workout. 25 minutes goes by so fast and I was dripping sweat! (I had to pause the dvd a few times because Ava was distracting me but it was still a great workout.)</p>

<p>We also did a little food prep. I had no game plan this weekend so I kinda just looked at what we had and starting cooking. Sometimes working on the fly is the best and I ended up getting a lot of veggie sides ready for my week ahead.</p>

<li><strong>Chicken salad with celery, tomatoes, &amp; avocado</strong></li>
</ul>
<p>We have a lot of healthy eats ready to go in the fridge, yum!</p>
