<p>I know I&#8217;m random but that&#8217;s me&#8230; now since it&#8217;s Wednesday lets get into the food talk.</p>

<p style="text-align: center;">People make the comment a lot about eating for 2 when you are pregnant and that&#8217;s not really the case. You only need about an extra 300 calories a day but let me tell you some days I do feel like I am eating for 2 and my appetite has been increasing.</p>
<p style="text-align: center;">On Monday I woke up at 5:45am for 2 reasons. 1. My body knew I had to get going and ready to teach our new Group Power workout and 2. I had to pee.</p>
<p style="text-align: center;">I woke up a little tired but chugged some water and sipped on a little bit of coffee as I whipped together breakfast.</p>

<p style="text-align: center;"><strong>2 eggs, sautéed spinach with olive oil &amp; potatoes</strong>. This is my regular simple healthy &amp; filling breakfast.</p>
<p style="text-align: center;">I headed to the YMCA around 7am to teach GROUP POWER. It was an awesome workout and I&#8217;m sure every inch of my body will feel it tomorrow.</p>

<p style="text-align: center;">and some random <strong>the</strong> <strong>Good Bean Sea Salt chickpeas</strong>. Ava was eating them and she made them sound good!</p>
<p style="text-align: center;">We headed back to the Y for my second class. I got a good sweat and I left the class STARVING. I said it to Ava on the car ride home and she said Mommy are you starving and I said yesssssss. She&#8217;s too funny.</p>
<p style="text-align: center;">I quickly came home to heat up some leftovers.</p>

<p style="text-align: center;">I&#8217;m on an orange kick and I feel like my day is not complete without one. Costco sells them in a giant box so it will last me a couple weeks!</p>
<p style="text-align: center;">My metabolism must&#8217;ve been kicked in high gear because my hunger came a lot quicker then it normally does. Around 2:15 I needed a snack.</p>
<p style="text-align: center;">I opted for a<strong> peanut butter sandwich</strong>. I needed something that would fill me up for a while.</p>

<p style="text-align: center;">In the late afternoon we went for a long walk with Cooper. As much as my body didn&#8217;t want to move, I knew he needed the exercise so we made it happen. I literally was spent after the walk but it was time to cook dinner.</p>
<p style="text-align: center;">I decided to make a simple lean beef taco salad. We topped our <strong>salad with tomatoes, peppers, cucumbers, salsa, ground beef &amp; guacamole</strong>. It was so delicious. I also had tortilla chips with this and a second serving <img src="http://thefitskool.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" /></p>

<p style="text-align: center;">Because this day needed another meal I snacked on a <strong>yogurt with mixed berries &amp; granola</strong> while Marc and I watched the episode of Scandal from last Thursday.</p>

I can&#8217;t say I&#8217;m feeling 100%, I&#8217;ve had a bit of a sore throat&#8230; top that with nausea and fatigue (pregnancy problems) and I guess I can&#8217;t say I&#8217;m feeling all of myself these past few days.</p>
<p style="text-align: center;">I&#8217;m staying positive, working through it but I sure do hope all of this ends ASAP. On a good note I know my body needs healthy foods so I&#8217;m trying my best to fuel with healthy meals and of course I&#8217;m listening more towards my healthy cravings!</p>

<p style="text-align: center;">Monday morning I popped right out of bed. i was nervous and anxious because I had to teach the new Group Power routine and to be honest I didn&#8217;t get to practice as much as I would&#8217;ve liked, but I knew I would be fine.</p>
<p style="text-align: center;">I started off with a glass of <strong>water and a cup of 1/2 calf pumpkin coffee</strong>. I needed an extra boost to get going!! I&#8217;ve been avoiding coffee so I got the kick I needed <img src="http://thefitskool.com/wp-includes/images/smilies/icon_wink.gif" alt=";)" class="wp-smiley" /></p>

<p style="text-align: center;">Breakfast was <strong>2 eggs scrambled with spinach &amp; potatoes</strong>.</p>
<p style="text-align: center;">Group power was a success&#8230; and my body was ready to refuel right after. I decided to have a <strong>Chocolate Peanut Oatmega Bar.</strong> I haven&#8217;t had one in a while and I knew I needed a good dose of protein. I also had a <strong>banana and some mixed nuts. </strong></p>

<p style="text-align: center;">At one point during my Group Power class i started to lose my voice, but my sore throat didn&#8217;t get worse so that was awesome.</p>
<p style="text-align: center;">At 10:30am I taught my active older adults fitness class we had a fairly large group and I mixed it up a lot today so I&#8217;m sure everyone will feel it tomorrow.</p>
<p style="text-align: center;">I&#8217;m so thankful that Marc food prepped for me on Sunday. He wins the award for best husband. I was so happy when I opened the fridge to find leftover <a title="Paleo Lean Beef Chili Recipe!" href="http://thefitskool.com/?p=2008"><strong>Lean</strong> <strong>Beef &amp; Veggie chili </strong></a>and I topped it with <strong>avocado</strong>. This recipe is actually paleo if that&#8217;s something you follow.</p>

<p style="text-align: center;">Chili is always extra tasty on a really cold day, it warmed me right up! This recipe was actually one that I came up with a year or so ago and I&#8217;m so glad we brought it back out. It&#8217;s so tasty.</p>

<p style="text-align: center;">Ava napped for me and I was SUPER thankful because I got to do work and most importantly sit down and rest for a bit.</p>
<p style="text-align: center;">In the afternoon I was craving <strong>strawberries</strong> but I knew I needed to balance it with something else. I opted for a <strong>Siggi&#8217;s Vanilla yogurt</strong>. This is my FAVORITE yogurt. One because the ingredients are clean and simple and two they taste great!</p>

I made some c<strong>hicken cutlets, a baked sweet potato, peas and a tossed salad</strong>. This is like the easiest meal to throw together in 20 minutes.</p>

<p style="text-align: center;">Around 730pm I was getting Ava ready for bed and decided I wanted a little snack. I sliced up some granny smith apples and of course some little toddler hands made their way into this bowl. I didn&#8217;t mind sharing!!</p>

<p style="text-align: center;">This week is a short one for me and I&#8217;m SO excited for another long weekend with my family. It&#8217;s been a great holiday season but after this weekend I&#8217;m ready to get back to a schedule and some &#8220;healthier&#8221; eating. Do you agree?? I have been eating healthy about 85% of the time but I would like to bump it to 90% which means not randomly grabbing a leftover chocolate cookie to snack on after breakfast <img src="http://thefitskool.com/wp-includes/images/smilies/icon_sad.gif" alt=":(" class="wp-smiley" /></p>

<p style="text-align: center;">I woke up starving Monday morning and the first thing I could think about was getting my belly full. I made 2<strong> Scrambled Eggs with peppers &amp; potatoes, 1/2 cup of coffee, and a glass of water. </strong>This meal never fails.</p>

<p style="text-align: center;">After Group Power I was STARVING and my body needed to refuel immediately. While I was packing up my stuff in the room I drank my <strong>protein shake</strong> and I ate the <strong>banana</strong> in the car!</p>

Once again my belly was rumbling and I decided I was going to make a quick lunch at home. I had the same thing as last week, go figure. It&#8217; probably because I HATE deciding what to eat. When there&#8217;s stuff in the fridge I just grab it and eat it. Sometimes my laziness with food gets the best of me.</p>

<p style="text-align: center;">Dinner was my favorite meal of the day. Marc cooked dinner and basically surprised me with a delicious meal. I knew we were having steak but I didn&#8217;t know what else he put together. First I had some salad.</p>

<p style="text-align: center;">It was healthy &amp; tasty, my kinda meal. I&#8217;m pretty much all for Marc cooking. Whenever he cooks I know it&#8217;s going to taste amazing. I also love the fact that he cooked and cleaned up everything. I hate doing dishes so this was awesome, I felt very spoiled.</p>
<p style="text-align: center;">Because my night is never complete without some sort of snack. I cut up a nice size <strong>bowl of strawberries</strong> and also ate a random bowl of leftover <strong>mashed potatoes</strong>.</p>

<p style="text-align: center;">I woke up early and the first thing I wanted to do was cook breakfast. I quickly made myself <strong>2 scrambled eggs with peppers &amp; potatoes</strong>. It looks messy but it was delicious &amp; filled up my belly.</p>

<p style="text-align: center;">Marc had the day off so he drove me to get my car fixed. I had a pretty low tire and I needed a new one. While my car got fixed we took Cooper to the dog park to play. We picked up my car and then Marc was so kind to pick us up some food from Garden Catering.</p>
<p style="text-align: center;">I got a<strong> GC/GV Wrap</strong> <strong>(grilled chicken and grilled veggies)</strong> It was SO good and totally hit the spot. I also snacked on some of Ava&#8217;s french fries (those are my weakness)</p>

<p style="text-align: center;">In the afternoon I did some computer work and ad an appointment I have been eating a lot of salad these last couple days. We had so much leftover from the weekend and I hate wasting food.</p>

<p style="text-align: center;">Dinner was a last minute throw together. Marc wanted <strong>steak</strong>, so he went to the store and bought some. We also had some <strong>roasted yukon gold potatoes, sliced zucchini, and roasted SUNCHOKES</strong>. I capitalized the sun chokes because they are amazing and need to be highlighted. We don&#8217;t always see them in the store but when we do, they are put in the cart. If you like artichokes you will love these.</p>

Mission accomplished and I know it was worth all the pain.</p>

<p style="text-align: center;">I am a huge fan of the meal plan, it&#8217;s balanced, allows for any foods, and it makes me feel satisfied and healthy!!</p>

I made<strong> 2 eggs over easy, had my usual sauteed spinach w/olive oil and lots of those delicious potatoes</strong>. I could eat this every day (and I do on most days)</p>

<p style="text-align: center;">This week is once again a busy one, but it&#8217;s also a short work week for Marc and I. We have my best friends wedding this weekend and I am super excited for the festivities to begin.</p>
<p style="text-align: center;">I know my blog posts are sporadic these past 2 weeks but hang in there with me, after this weekend I feel like my time is freeing up a bit more!! I feel like every day I have something new and exciting to share with you, its really just finding the time to sit down for 30+ minutes to write out my thoughts, my experiences and my tips with you!</p>

<p style="text-align: center;">I chose Monday because I was busy and on-the-go but I still made health conscious decisions.</p>
<p style="text-align: center;">My morning started off early in preparation for my Group Power class. Monday mornings always feel a bit tougher to get out of bed, but for some reason I woke up before my alarm that morning and I went with it. I quickly got changed made some coffee and started whipping up my breakfast.</p>
<p style="text-align: center;">I had <strong>2 eggs spinach toast homemade pumpkin spice coffee! </strong>It was delicious. This morning was a bit different for me. Ava was still sleeping when I left the house at 710am and I usually get to see her before I leave for work but I didn&#8217;t!! It definitely felt weird, but I was excited to see her after my class when she was playing at daycare <img src="http://thefitskool.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" /></p>

I really worked them hard on Monday and I could tell by the end everyone was tired but was excited for some of the new exercises we practiced. It was great.</p>

<p style="text-align: center;">I made another HELLO FRESH meal. It was <strong>Coriander &amp; Cumin crusted chicken with Israeli Couscous salad, roasted zucchini, goat cheese, shallots and caramelized lemon.</strong></p>

<p style="text-align: center;">After dinner Cooper &amp; Ava played in the yard while Marc did some yard work. She loved the leaves and it was nice to be outside on a crisp fall night!! Once Ava was asleep a whole lot of NOTHING and snacked on an<strong> orange &amp; some veggie chips</strong>!</p>

<p style="text-align: center;">Yesterday I woke up around 6am, started my day with a big old glass of <strong>water</strong> and then about 20 minutes later drank a <strong>cup of coffee</strong> with a little almond milk.</p>
<p style="text-align: center;">Breakfast was SO good. I figured I would give measurement details again like last week because we are focusing on portions with our clean eating challenge. I had a <strong>VEGGIE SCRAMBLE</strong> 1 egg, 1 cup egg whites, 1 tsp olive oil with 1/4 cup diced peppers + 1/4 cup sliced mushrooms and 1 medium potato sliced. I love breakfast.</p>

<p style="text-align: center;">Before I wrap this up.. can I tell you that on Monday Marc and I threw out our leftover Chocolate lava cakes from this weekend. <em>Do you know how <strong>HARD</strong> that was for me??</em> I thought about them sitting in the garbage and it kinda got me sad.  <strong>BUTTTT</strong> I feel better without that sugar and sometimes I feel like when I eat sugary desserts it just makes me want more. Do you feel me?</p>

The challenge starts Monday February 16th so email me if you would like to join! (kgfitnessllc@gmail.com) I tried to be as detailed as possible so you can get an idea of my portion sizes. Normally I just eat whatever I want but make sure that it&#8217;s healthy, but tracking portion sizes is what really made the difference for me. It is so easy for me to eat 2 spoons of peanut butter or a couple extra scoops of anything like nuts, but keep in mind it all adds up. <span style="text-decoration: underline;"><em><strong>You can easily over eat healthy foods!</strong></em></span></p>

<p style="text-align: center;">Breakfast was <strong>1 egg + 1 cup egg whites with 3/4 mushrooms &amp; squash</strong>. Plus a <strong>whole grain english muffin</strong>.</p>

<p style="text-align: center;">Before Boot Camp I made a quick and easy dinner. <strong>Zoodles with a turkey meat sauce</strong>. (I had 1 cup zucchini + 1 cup of the meat sauce) This meal came together in 15 minutes flat. Ava devoured hers and I enhaled mine because she ate so fast!</p>

<p style="text-align: center;">We played with Ava around the house and then had a delicious warm lunch. A bowl full of <strong>Lentil &amp; Veggie soup with a sweet potato on the side.</strong> Lentils are so filling and super nutritious. Ava even enjoyed it.</p>

<p style="text-align: center;">The afternoon got a little lazy, maybe its from just being home all day but I watched some <strong>TV, did some laundry </strong>and watched Cooper play in the snow.</p>
<p style="text-align: center;"><strong>Mid-Afternoon</strong> I snacked on an <strong>orange and a turkey lettuce wrap with avocado &amp; tomato</strong>! I also snacked on some baby carrots</p>

<p style="text-align: center;">For dinner we decided to try something new. I made <strong>Paleo Stuffed Peppers</strong> using ground chicken as the base. In the mix was cauliflower, tomatoes, onions &amp; seasonings! On the side we had some <strong>Roasted</strong> <strong>Sunchokes in olive oil</strong>&#8230;. they are SO good. Basically they taste like an artichoke french fry. (more to come on sunchokes)</p>

<p style="text-align: center;">I am linking up with <a href="http://www.peasandcrayons.com">Jenn</a> to share <strong>WIAW (What I ate Wednesday)</strong> or in this case what I ate Tuesday.</p>
<p style="text-align: center;">My morning began with a cup of <strong>coffee, 2 eggs served over spinach, 2 pieces of toast, a spoon full of guacamole and blackberries</strong>. I try to eat a big breakfast every day so I can power through my day. If I don&#8217;t eat a big enough breakfast I feel like my day crumbles and I am constantly hungry.</p>

<p style="text-align: center;">After training around 10am, I had<strong> 1/2 of a leftover baked potato topped with eggs and peppers</strong> with some olive oil. It was delicious and eggs always make for a great morning snack.</p>

<p style="text-align: center;">For lunch I had leftovers again. Are you surprised? <strong>Salmon with sliced sweet potatoes and 2 stuffed mushrooms</strong>! It was simple &amp; delicious <img src="http://thefitskool.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" /></p>
<p style="text-align: center;">Also not pictured was a <strong>granny smith apple</strong> that I had right before lunch!</p>

<p style="text-align: center;">Around 3pm I veggied out with a big salad. My <strong>salad had cucumbers, tomato, celery, carrots, avocado &amp; a red wine vinigarette dressing</strong>. Salads are the easiest way for me to add veggies and feel satisfied. (I need my afternoon snack to have veggies because it keeps me full until dinner) I noticed when I have fruit &amp; yogurt or something like that I don&#8217;t stay as full.</p>

<p style="text-align: center;">My pre boot camp fuel was <strong>Homemade Chicken Soup with Kale, Celery, &amp; Carrots.</strong> I drizzled some olive oil on top and sprinkled some parmesan cheese in the mix.</p>
