				<content:encoded><![CDATA[<p>I&#8217;m no <strong>Rachel Ray</strong>, but I love meals that are cooked in less than 30 minutes. If the recipe is quick, simple, &amp; tastes great I am all for it.</p>
<p>When I got home from picking up Ava at daycare yesterday I had nothing planned for dinner. I literally opened the fridge and found a bag of kale and a pint of grape tomatoes in my vegetable drawer and thought, what can I do with this? Luckily I had some chicken sausage in the freezer that I quickly thawed and was excited I had something to throw together. While Ava napped I got to prepping&#8230; this meal literally took 20 minutes and was a huge hit. The flavors were on point.</p>
<p>We will definitely be making this recipe again.</p>
<p><em><span style="text-decoration: underline;"><strong>Chicken Sausage with Kale, Chickpeas, &amp; Tomatoes</strong></span></em></p>

<p><strong>Ingredients:</strong></p>
<p>1 package Al Fresco Sweet Italian Chicken Sausage</p>
<p>1 bag of chopped kale</p>
<p>1 can of chickpeas, drained</p>
<p>1/2 pint of grape tomatoes, halved</p>
<p>1/4 cup sherry wine</p>
<p>1/2 cup chicken broth</p>
<p>1/2 tsp garlic powder</p>
<p>1/2 tsp onion powder</p>
<p>1/2 tsp oregano</p>
<p>salt &amp; pepper to taste</p>
<p>2 tablespoons olive oil</p>
<p><strong>Directions:</strong></p>
<p>Heat a large pan to medium heat, add 1 tablespoon olive oil. Add in grape tomatoes and saute for 3-4 minutes. Add in kale, chicken broth, &amp; sherry wine and cook for 5 minutes.</p>

<p>Drizzle remaining oil and seasonings, mix well. Remove kale mixture from pan and place into serving dish. Add chicken sausage to pan and cook 8-10 minutes or until cooked (as directed by package). Add the Kale mixture back to the pan and mix well. Return everything back to serving dish and eat!</p>

				<content:encoded><![CDATA[<p>If you have a craving for sweets, try some of these <b>GOLDEN ROASTED PLANTAINS!</b> Marc and I had bought some green plantains a couple of weeks ago with intentions of making plantain chips. Well, change of plans.. the plantains were too ripe so we decided to roast them.</p>

<p>The result was yummy, soft, golden goodness and I couldn&#8217;t have just one! The good news is this recipe is healthy and nutritious.</p>
<p><strong>GOLDEN ROASTED PLANTAINS</strong></p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>2 yellow ripe plantains</li>
<li>1-2 tbsp canola oil</li>
<li>Sea salt</li>
</ul>
<p><strong>Directions</strong>:</p>
<p>Preheat oven to 400 degrees and spray a baking sheet with baking spray.</p>

<p>Peel and Slice plantains into 1/4 inch thick slices. Coat the plantain slices with canola oil and place on the baking sheet. Bake for 10-12 minutes and flip. Cook another 10-12 minutes or until golden and crispy on the top.</p>

<p>We tested out a new recipe last night for <strong>plantain chips</strong>. They came out pretty good but we need to perfect the recipe a bit. I am thinking a tad more oil! 				<content:encoded><![CDATA[<p>Last week I was in the mood for turkey meatloaf so I created my own recipe with some sautéed veggies in the mix.  It doesn’t look that pretty from the picture but it sure did taste yummy.  The leftovers even make a great sandwich the next day!!</p>
<p>There&#8217;s only one slice of meatloaf pictured on my plate but I had seconds! We have also been cleaning out the grocery store on sweet potatoes, I am slightly obsessed lately.</p>

<p><strong>Ingredients:</strong></p>
<p>1lb ground turkey</p>
<p>½ package of sliced mushrooms</p>
<p>¼ cup diced red peppers</p>
<p>½ medium onion</p>
<p>1 egg</p>
<p>salt &amp; pepper to taste</p>
<p>1 tsp hot sauce</p>
<p>1 tsp Worcestershire sauce</p>
<p>¼ breadcrumbs</p>
<p>1 tbsp olive oil</p>

<p><strong>Directions: </strong></p>
<p>In a medium size pan sauté the veggies with olive oil for 5 minutes. Let cool. In a medium bowl combine remaining ingredients and mix well. Once the veggies are cool, add them to the bowl and mix.  Spray a loaf pan with baking spray and bake at 400 degrees for 35 minutes.</p>

				<content:encoded><![CDATA[<p>The weather was very snowy yesterday and I was forced to cancel my boot camp class because the place I teach at was closing early. That meant I was stuck at home with Ava. This wasn&#8217;t a bad thing but I do get bored easily. I decided to try out a banana bread recipe. I rarely have 2 over-ripe bananas sitting around the house, but 1 is definitely more common. Do you agree?</p>
<div>So with my <b>1 banana,</b> I whipped up this recipe in no time. I was overly pleased with how the banana bread turned out especially since I snuck in some oats and wasn&#8217;t sure how that would effect it! With only 1/2 cup oats left in the container I figured I should use them up. I am really glad I did because it added some great texture to the banana bread.</div>

<li>1/4 cup fat-free milk</li>

<li>1/2 cup regular oats</li>
<li>1 cup all-purpose flour</li>
<li>1 teaspoon baking powder</li>
<li>1/4 teaspoon baking soda</li>
<li>1/4 teaspoon salt</li>
<li>1/4 teaspoon ground cinnamon</li>
</ul>
<p><strong>Directions</strong>:</p>
<p>Preheat oven to 350 degrees. Combine brown sugar, banana, egg whites, oil &amp; milk and mix well. Combine remaining dry ingredients. Add flour mixture into wet mixture until moist.</p>
