<p style="text-align: center;">I&#8217;m usually not a leftover fish person, but this <strong>Lemon &amp; Herbs tilapia</strong> was banging. I had a <strong>sweet</strong> <strong>potato and zucchini</strong> on the side. I was quite satisfied with this lunch and it held me over for a long time.</p>

<p style="text-align: center;">When I opened the fridge for dinner we had a bunch of leftovers from food we made this weekend. The first thing that caught my eye was <strong>carrot soup</strong> that a family friend made for me. SO good and so healthy.</p>

<p style="text-align: center;">I had asked my mom to make me some <strong>meatballs</strong> on Saturday (because sometimes you just want your mom&#8217;s cooking) and there were still some leftover so I knew I had to eat some!! I decided I didn&#8217;t want sauce or pasta, so I just ate them as is with a side of <strong>green beans</strong>. I also had a small piece of whole grain bread with it.</p>

<p style="text-align: center;">Wow somehow it&#8217;s Thursday already and it seems like I can&#8217;t keep track of my days this week because they are flying by (no complaints!)</p>
<p style="text-align: center;">Yesterday the weather warmed up for us a bit. I was able to get out and walk <strong>Cooper</strong> in the late afternoon. The sun was shining, but don&#8217;t get me wrong it was still freezing when the wind blew. I let him run around at the park and then we walked along the water. Fresh air always feels nice even when your nose turns red.</p>
<p style="text-align: center;">I have a recipe to share with you today that is a great substitute for regular Beef Meatballs. I made turkey meatballs the other night in hopes that we could sneak some veggies in for Ava and of course for myself too.  I love red meat, but obviously its nice to change things up and keep it healthy!</p>
<p style="text-align: center;">These were so easy to make and they turned out super moist (thanks to the veggies). I had 2 meatballs on my plate but I couldn&#8217;t help but to grab another one. Ava kept making an <strong>MMMM-MMMM</strong> noise when she was eating them and reaching for more.  When she says MMMM that&#8217;s her happy, I like these Mom noise. WIN! If she didn&#8217;t like them she would hand them off to Cooper so I was happy she approved.</p>
<p style="text-align: center;">Sometimes turkey meat dries out so I was super happy with the result and I <strong>WILL</strong> be making them again.</p>
<p style="text-align: center;"><span style="text-decoration: underline;"><strong>Kid Approved Turkey Meatballs Recipe</strong> </span>(with hidden veggies)</p>

<ul>
<li><span style="color: #000000;">1 lb Ground Turkey</span></li>
<li><span style="color: #000000;">1/2 cup Bread Crumbs</span></li>
<li><span style="color: #000000;">1 egg</span></li>
<li><span style="color: #000000;">1 tsp Sea Salt</span></li>
<li><span style="color: #000000;">1 tbsp Olive oil</span></li>
<li><span style="color: #000000;">1/3 cup finely chopped Mushrooms</span></li>
<li><span style="color: #000000;">1/3 finely chopped Spinach (I used frozen, make sure the water is drained)</span></li>
<li><span style="color: #000000;">1 tsp Mrs. Dash Garlic &amp; Herb</span></li>
</ul>

<p><span class="Apple-style-span"><span style="color: #000000; font-family: tahoma, sans-serif;"><strong>DIRECTIONS</strong>:</span></span></p>

<li>In a frying pan cook the mushrooms &amp; spinach on medium heat until slightly tender. Let cool for 5 minutes.</li>
<li>In a large bowl, mix turkey, bread crumbs, mushrooms, spinach, egg, Mrs. Dash seasoning, and salt until well combined; form into 1 1/2-inch balls.</li>
</ul>

<li>Heat olive oil in a large skillet over medium heat. Add meatballs and cook, turning, until browned, about 7 or 8 minutes.</li>
<li>Add chicken broth; cover and reduce heat to low. Cook until liquid is almost completely absorbed, about 8 or 9 minutes minutes. Serve.</li>

				<content:encoded><![CDATA[<p>It&#8217;s Friday guys and I am pretty pumped! We have so many things going on this weekend and I really think because I was looking forward to the weekend it made the week draggggg. Saturday I am headed to a new class that the <strong>YMCA</strong> is launching called <strong>GROUP RIDE </strong>(it is similar to Group Power but it&#8217;s a spin class) My co-workers are teaching it for the first time so I am going to support them and also get my sweat on. Shortly after, we will be driving to Wallingford, CT to attend a 1st Birthday party! We get to see some college friends which is always a lot of fun!!</p>
<p>And guess what is on the agenda for Sunday&#8230; a 2 year old Birthday party haha. Ava should have a blast and be exhausted after all her fun play dates.</p>
<p>On a totally different note, did you like <strong><a title="Something NEW to The Fit Skool…" href="http://thefitskool.com/?p=5208">Marc&#8217;s post</a> </strong>yesterday? I am excited for you to get to know him a little better, he has so many great things to share with you over the next few weeks about his fitness journey! Be sure to check in tomorrow he has a follow up post.</p>
<p>Besides being excited for the weekend. <em><span style="text-decoration: underline;"><strong>Here are a few other things I have been loving this week.</strong></span></em></p>
<p style="text-align: center;">The <strong>FOAM ROLLER.</strong> As torturous as it is, my legs get a lot looser after I use this bad boy. It gets rid of my tightness from millions of squats and I walk away feeling so much better.</p>

<p style="text-align: center;"><strong>Assisted Pull-Up Machine&#8230;</strong> this machine really helped me this week. I was sore the other day, so I really needed the assistance and it has helped me improve my Pull Up strength. There was no chance of me doing them on my own!</p>

They were red pepper &amp; asiago cheese flavor&#8230; UM amazing. I devoured mine and Ava was begging for more. You gotta try them. Instead of using a bun or bread I used Romaine and I&#8217;m glad I did because you can taste all the seasoning from the juicy sausage!</p>

I had studied for a while and I learned so much through my studying. I think this specialization will help SO much with my female clients as well as the females that take my classes.</p>

<p style="text-align: center;">The <strong>WFS</strong> will be great to add that to my resume of training skills. Two years ago I took my <strong>Fitness Nutrition Specialist</strong> certification through <strong>NASM</strong>. They were both difficult exams, but they were educational so I was up for the challenge. I found it a lot harder this time around  to make time to study with a baby to take care of! I could only focus or study when she was napping or sleeping which means my window to study was limited!!</p>
<p style="text-align: center;">Lets just say I was extremely pumped to have completed it this past weekend!!</p>
<p style="text-align: center;">On a different note last night I whipped up a <strong>SUPER</strong> fast dinner that was actually Gluten Free and we loved it. When it comes to pasta and meatballs I always choose homemade over pre-made, but lets be serious sometimes convenience is more important. I was happy to stumble on these <strong>Aidell&#8217;s Chicken Meatballs. </strong></p>
