<p>This morning  I quickly whipped up a meal plan after going to the Grocery store. I had all intentions of doing the meal plan before but that didn&#8217;t happen.</p>

				<content:encoded><![CDATA[<p>So somehow it’s Monday already. I can’t say I was productive this weekend but I did kick up my feet a lot and just straight chill on the couch. That doesn’t happen too often. Usually my mind is always busy and I am constantly doing stuff so it was nice to just chill.</p>
<p>I watched the <strong>Grey’s anatomy</strong> episode from Thursday that I missed, and man I do love that show! It never gets old.</p>
<p>Saturday morning I taught a kick A$$ boot camp class with some awesome people. We were dripping sweat and working hard. Marc was able to come to class because my dad offered to hang out with Ava. We both had sore inner thighs today and as painful as that can be it’s always nice to have tight thighs <img src="http://thefitskool.com/wp-includes/images/smilies/icon_wink.gif" alt=";)" class="wp-smiley" /></p>
<p>The rest of the day I ran some silly errands like CVS &amp; the grocery store. My friend Lauren stopped by with her fiancé, which was a nice surprise!!</p>
<p style="text-align: center;">Shortly after we got <a href="http://www.thaibasilofgreenwich.com/"><strong>Thai Basil</strong> </a>takeout for dinner.</p>

<p>If you haven&#8217;t had Thai food before you probably should try it. I’m obsessed. I would eat this every day this week if I could. The flavor was on point and I didn’t have to cook. Two Thumbs up over here.</p>
<p>Lets back up a bit… somehow I forgot to mention that we only got 4 hours of sleep Friday night. Little miss Ava decided to wake up from 1:45-4:5am. I don’t know how I forgot to say that. I think her teeth were bothering her. I am assuming it’s the molars because she literally can’t shove her little fingers any further in her mouth. I felt so bad for her and that she was uncomfortable but all I kept thinking about was when I would get to go back to sleep!!! Luckily I mustered up energy and made it through the day. Bed time definitely came a little early.</p>
<p>Now lets talk <strong>SUPER BOWL SUNDAYYYYYY.</strong></p>
<p>I woke up early, grabbed some <strong>DUNKIN</strong> coffee (because I wanted a treat) and then did some laundry at the laundry mat. I needed my comforter washed and I can’t fit that thing in mine at home so I had no choice! I also went to Kohl’s to buy some workout gear. Seriously that store is so cheap, I love it!</p>
<p>Marc did some food prep for the big game while I was gone. (I can’t believe I pulled off not prepping food yesterday!!!) Seriously all I made was my <a title="Healthy Creamy Buffalo Chicken with Chobani" href="http://thefitskool.com/?p=4834"><strong>Creamy Pulled Buffalo Chicken</strong></a> and Marc and my dad cooked the rest. It was so nice!</p>
<p>We took Cooper to the dog park to tire him out.. and he had so much fun. There must&#8217;ve been 10-12 other dogs and he ran around like a mad man!</p>

<p style="text-align: center;">We headed home and started getting ready for the game. Look how cute Ava&#8217;s jersey is!! Her&#8217;s is even authentic.</p>
<p>My family came over around 4pm to start the party. We literally had enough food for 20 people.</p>

<p>My dad told me he is trying to eat healthier so he <strong>GRILLED</strong> BUFFALO WINGS before putting them in the Crockpot!! This helped to get rid of some of the &#8220;unhealthy fats.&#8221;</p>

<p>Guys there were delicious but so spicy my mouth was on fire. It made me so happy to hear that he is really trying to focus on eating better. Even though he is fit, he doesn’t always make the healthiest food choices so it was nice to see him put a healthier spin on fried wings!!</p>

<p>Can we talk about a nail biter game?? We were on the edge of our seats the entire second half. With some terrible plays by the Patriots, Marc started getting a little negative about the outcome of the game. I reassured him the Pats would come back and win. They are always better under pressure.</p>

				<content:encoded><![CDATA[<p><strong>Super Bowl Sunday</strong> is in 3 days, are you ready?</p>
<p>I have always treated the Superbowl like any other holiday and I get super excited. It&#8217;s even better when your team is playing in the <strong>BIG</strong> Game. With all the football nonsense that has been going on about the Patriots, I can honestly say it has diminished some of the excitement however; once the game begins I know that will all go away and I will be pumped up to watch.</p>
<p>I love indulging in game day food (Who Doesn&#8217;t?) but I have always been conscious of adding in healthier ingredients and making foods a little less junky if you know what I&#8217;m saying.</p>
<p>There&#8217;s no reason <strong>not to eat wings and chili</strong> but lets try to make them a little more nutritious so we don&#8217;t feel guilty after!</p>

				<content:encoded><![CDATA[<p style="text-align: center;">I hope <strong>2015</strong> is off to a great start for you! We enjoyed our long weekend as a family and spent a lot of time relaxing and getting our house organized from the Holidays.</p>
<p style="text-align: center;">I naturally choose to eat healthy day in and day out, but after several indulgences over the last 2 weeks I made a conscious effort this weekend to <strong>eat lots of healthy food</strong>.</p>
<p style="text-align: center;">I was able able to make several trips to the gym this weekend. I did a boxing workout friday, an elliptical cardio workout</p>

<p style="text-align: center;">and I also practiced the new Group Power workout with my co-worker Michelle.</p>

<p style="text-align: center;">By the end of the weekend I was sore!!</p>
<p style="text-align: center;">Yesterday while making breakfast for Marc and Ava, I decided to whip up a quick <strong>Frittata</strong> with eggs, spinach, tomato, and a little sprinkle of cheddar cheese. I figured this would be a great mid morning snack to have on hand throughout the week. I am a huge egg lover so I don&#8217;t know how long they will last, but hey at least I have a healthy snack planned.</p>

<p style="text-align: center;">I also had a genius idea to<strong> roast a big chicken</strong> in the oven&#8230; We placed it on top of an assortment of veggies (parsnips, carrots, sweet potatoes, white potatoes, &amp; onions)  It really was <span style="text-decoration: underline;"><strong>GENIUS!</strong></span> the veggies soaked up some of the delicious juice from the chicken and they were so good I couldn&#8217;t stop eating them!</p>

<p style="text-align: center;">If veggies aren&#8217;t prepared and easily accessible I will most likely not eat them. I need them <strong>right in front of my face.</strong> How about you guys?</p>
<p style="text-align: center;">Anticipating this week would be crazy with a full week of work, I also cooked up some <strong>Chicken Sausage &amp; Peppers</strong>. It will definitely be nice to have a dinner all ready to go when I have to teach class at night. It makes my life so easy!!</p>

				<content:encoded><![CDATA[<p>I love my job and I enjoy each day that I am teaching and training&#8230; but relaxing at the beach and having no set agenda was quite enjoyable. I am back from my mini <strong>YMCA</strong> vacation and it sure felt good to teach <strong>Group Power</strong> this morning after a week off.  I was feeling strong and decided to lift heavier on some of the tracks. I am sure I will be sore tomorrow!</p>
<p>This weekend like all weekends flew by. We had several parties on <strong>Saturday</strong>&#8230; one was a 1 year old bday party and another was a party for my friend who got married back in June. Both were fun and the weather turned out great!</p>
<p><strong>Sunday</strong> was a beach day for us&#8230;</p>

<p>We got up early, walked Cooper grabbed some coffees on our walk and then headed to the beach mid-morning. Ava loves it!</p>

<p>She was on the look out for seagulls. I am pretty sure she is the only person on the beach that likes them!</p>
<p>In the afternoon we did some stuff around the house and I completed a <strong>T-25 Cardio</strong> workout. T-25 has become my go to sunday afternoon workout. 25 minutes goes by so fast and I was dripping sweat! (I had to pause the dvd a few times because Ava was distracting me but it was still a great workout.)</p>

<p>We also did a little food prep. I had no game plan this weekend so I kinda just looked at what we had and starting cooking. Sometimes working on the fly is the best and I ended up getting a lot of veggie sides ready for my week ahead.</p>

<li><strong>Chicken salad with celery, tomatoes, &amp; avocado</strong></li>
</ul>
<p>We have a lot of healthy eats ready to go in the fridge, yum!</p>

<p><strong>Yesterday</strong> we did some <strong>food prep</strong> in the morning and spent the afternoon resting &amp; relaxing around the house.</p>

<p>Instead of our typical summertime grilling we decided to turn on the oven for some <strong>Sunday Food Prep!</strong> Here is what we made:</p>
<p><strong>o   Applesauce Bran Muffins</strong> these make great on-the-go snacks in between clients and teaching classes!</p>

				<content:encoded><![CDATA[<p><strong>Sunday food prep</strong> has become a part of our weekly routine. I sit down and jot down some meal ideas and then prepare a grocery list. After that it&#8217;s time to prepare some of the meals and snacks I need for the week.</p>
<p>We usually don&#8217;t cook all of our meals but we may cook side dishes or snacks. This makes it easier when we do go to cook meals and saves us <strong>TONS</strong> of time.</p>
<p><strong><span style="text-decoration: underline;">Here&#8217;s what we prepped:</span></strong></p>
<div><b>Oven Roasted Potatoes</b> these are great for a side dish or with eggs at breakfast!</div>
<div><b>Chicken Breasts </b>for easy sandwich or salad toppers</div>
<div><b>Apple &amp; Fennel salad</b> a great refreshing side dish at lunch time</div>
<div><b>Pumpkin Bran Muffins</b> I love these muffins for breakfast or for an on-the-go snack</div>
<div><b>Snap peas &amp; carrots</b> for quick portioned snacks</div>
<div><b>Mixed nuts and dried fruit</b> a yummy filling snack</div>
<div><b>Peanut Butter protein bites </b>great post workout fuel</div>
<div><b>Fresh Fruit</b> another great healthy snack</div>
