<p style="text-align: center;">I am linking up with <a href="http://www.peasandcrayons.com">Jenn</a> to share <strong>WIAW (What I ate Wednesday)</strong> or in this case what I ate Tuesday.</p>
<p style="text-align: center;">My morning began with a cup of <strong>coffee, 2 eggs served over spinach, 2 pieces of toast, a spoon full of guacamole and blackberries</strong>. I try to eat a big breakfast every day so I can power through my day. If I don&#8217;t eat a big enough breakfast I feel like my day crumbles and I am constantly hungry.</p>

<p style="text-align: center;">After training around 10am, I had<strong> 1/2 of a leftover baked potato topped with eggs and peppers</strong> with some olive oil. It was delicious and eggs always make for a great morning snack.</p>

<p style="text-align: center;">For lunch I had leftovers again. Are you surprised? <strong>Salmon with sliced sweet potatoes and 2 stuffed mushrooms</strong>! It was simple &amp; delicious <img src="http://thefitskool.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" class="wp-smiley" /></p>
<p style="text-align: center;">Also not pictured was a <strong>granny smith apple</strong> that I had right before lunch!</p>

<p style="text-align: center;">Around 3pm I veggied out with a big salad. My <strong>salad had cucumbers, tomato, celery, carrots, avocado &amp; a red wine vinigarette dressing</strong>. Salads are the easiest way for me to add veggies and feel satisfied. (I need my afternoon snack to have veggies because it keeps me full until dinner) I noticed when I have fruit &amp; yogurt or something like that I don&#8217;t stay as full.</p>

<p style="text-align: center;">My pre boot camp fuel was <strong>Homemade Chicken Soup with Kale, Celery, &amp; Carrots.</strong> I drizzled some olive oil on top and sprinkled some parmesan cheese in the mix.</p>

<p style="text-align: center;">It&#8217;s time to share with you my daily eats. I am linking up with <a href="www.peasandcrayons.com">Jenn</a> again for a <strong>What I ate Wednesday</strong> post!!</p>
<p style="text-align: center;">Yesterday I posted on <a title="SUGAR DETOX!" href="http://thefitskool.com/?p=4296">Tips to eliminate the sugar overload from Halloween</a>, so I stuck with clean eating yesterday and I feel great today.</p>

I also ate some <strong>strawberries</strong> because Ava was eating them and she makes everything look good. </center><center><a href="http://thefitskool.com/wp-content/uploads/2014/11/IMG_0762.jpg"><img class="alignnone size-medium wp-image-4319" src="http://thefitskool.com/wp-content/uploads/2014/11/IMG_0762-300x225.jpg" alt="IMG_0762" width="300" height="225" /></a></center><center></center><center></center><center></center><center>After training one of my clients I ate a banana and then had some leftover <strong>egg whites with avocado &amp; tomato</strong>. </center><center><a href="http://thefitskool.com/wp-content/uploads/2014/11/IMG_0764.jpg"><img class="alignnone size-medium wp-image-4320" src="http://thefitskool.com/wp-content/uploads/2014/11/IMG_0764-225x300.jpg" alt="IMG_0764" width="225" height="300" /></a></center><center>This bowl looks quite empty because I forgot to snap a picture before I dove in. If you haven&#8217;t had this combination before I highly recommend that you try it!! </center><center></center><center></center><center></center><center></center><center><b></b></center><center>As you know I am the leftover queen when it comes to lunch! I had some leftover <strong>Chicken Francese &amp; Asparagus</strong></center><center><a href="http://thefitskool.com/wp-content/uploads/2014/11/image13-e1415154864812.jpg"><img class="alignnone size-medium wp-image-4307" src="http://thefitskool.com/wp-content/uploads/2014/11/image13-e1415154864812-225x300.jpg" alt="image" width="225" height="300" /></a> </center><center>Plus a<strong> sweet potato </strong>with some butter. </center><center><a href="http://thefitskool.com/wp-content/uploads/2014/11/image14.jpg"><img class="alignnone size-medium wp-image-4308" src="http://thefitskool.com/wp-content/uploads/2014/11/image14-300x225.jpg" alt="image" width="300" height="225" /></a></center><center></center><center>It was all ready to go and devoured quickly. </center><center></center><center></center><center></center><center>I was quite hungry in the afternoon and had a few snacks: a <strong>PURIUM</strong> shake, a <strong>Cortland Apple</strong> (not pictured) and some <strong>nuts.</strong></center><center><a href="http://thefitskool.com/wp-content/uploads/2014/10/IMG_0296.jpg"><img class="alignnone size-medium wp-image-3997" src="http://thefitskool.com/wp-content/uploads/2014/10/IMG_0296-225x300.jpg" alt="IMG_0296" width="225" height="300" /></a><a href="http://thefitskool.com/wp-content/uploads/2014/10/IMG_0353.jpg"><img class="alignnone size-medium wp-image-4047" src="http://thefitskool.com/wp-content/uploads/2014/10/IMG_0353-225x300.jpg" alt="IMG_0353" width="225" height="300" /></a></center><center></center><center>I quickly whipped up this Sausage dinner before boot camp. It literally took 10 minutes. We had <strong>Spinach &amp; Red Onion Chicken Sausage</strong> served with <strong>mixed peppers &amp; onions. </strong>There&#8217;s also a white potato under there somewhere. YUMMM.</center><center><a href="http://thefitskool.com/wp-content/uploads/2014/11/image17-e1415154887926.jpg"><img class="alignnone  wp-image-4311" src="http://thefitskool.com/wp-content/uploads/2014/11/image17-e1415154887926-225x300.jpg" alt="image" width="271" height="361" /></a> </center><center></center><center>I was a sweaty mess after Boot Camp last night, it was a great workout! Are you a leftover person? I personally love having leftovers in the fridge.  When I don&#8217;t have to think about food, I am a much happier person!! Opening the fridge and seeing containers full of food makes my life so easy!</p>

<p style="text-align: center;">Now.. on to my food journal from yesterday.</p>
<p style="text-align: center;"><strong> </strong>I need eggs in the morning, but I think I could also use a little more variety too. Every time I try to switch it up and have scrambled eggs, I think to myself &#8220;why didn&#8217;t I make over easy eggs??&#8221; Runny eggs have so much more flavor to me.  You could just say that its my thing, I don&#8217;t know what to tell you!&#8230;.well actually I do. It works with my schedule and more importantly it works with Ava&#8217;s! Getting her ready and feeding her in the morning is my priority, and that is why my breakfast has gotten boring. I&#8217;m kind of stuck for now, but eventually someone might have to <em>force me</em> to get more creative with my<strong> Breakfast!</strong></p>
<p style="text-align: center;">Here is my breakfast, 2 eggs over easy, some toast and sauteed spinach. I always try to have spinach in the morning because I have low iron.</p>

<p style="text-align: center;">After training one of my clients in the morning I snacked on a small <strong>banana</strong> and a <strong>Cashew Cookie Larabar</strong>. Nothing wild here. Sometimes simple is better, and it certainly was in this case.</p>

<p style="text-align: center;">My lunch consisted of Leftover <strong>Chicken Francese, Broccoli &amp; Carrots </strong>and a 1/2 of a leftover <strong>Sweet potato. </strong>Chicken francese is not a meal I typically order or like too much.  However in this case, it was left over, it was not my original meal, and I have to admit it was pretty tasty. With a very light breading and just the perfect amount of lemony-ness I wish there was more than the 1 piece.</p>

<p style="text-align: center;">In the <strong>afternoon</strong> I wasn&#8217;t too hungry but I snacked on an <strong>apple with peanut butter</strong>, and also a piece of <strong>watermelon</strong>. Ava&#8217;s teeth were bothering her so I had bought her some watermelon to dig her teeth into. Even though it&#8217;s fall, this juicy watermelon tasted great.</p>

<p style="text-align: center;">Normally before <strong>Boot Camp</strong> class I have something light, but we ate some leftover <strong>Beef &amp; Veggie Chili</strong> with <strong>Avocado</strong> stuffed inside an <strong>Acorn Squash</strong>. It was quite delicious and a little too filling but I loved every bite. (I had twice the amount of chili that is in the acorn squash)</p>

				<content:encoded><![CDATA[<p>I have to admit, I have been quite lazy with my food the past couple of days.  Yesterday was an off day for me. I don&#8217;t have too many days where my mood is off, but it was, and I didn&#8217;t feel like focusing on food at all.But no worries, I managed to keep track of it all for you guys! You kept me motivated. Please excuse my boring food choices, but I blame lack of food prep Sunday for my simple meals/snacks.</p>

<p style="text-align: center;">My <strong>breakfast</strong> staple is a couple of over <strong>easy eggs</strong> with <strong>sauteed</strong> <strong>spinach</strong> and some <strong>potato hashbrowns</strong>! <p style="text-align: center;">Lunch rolled around and I was fortunate for some leftovers from dinner Sunday.. <strong>Blackened Salmon, Sweet Potatoes &amp; Green beans</strong>. I have been loving salmon lately.. we finally mastered how to cook it!! I took a picture of all the food on one plate but it came out terrible.</p>

<p style="text-align: center;">After boot camp I whipped up a <strong>Pumpkin Pie Protein shake</strong>. I was quite impressed! It may have been just a tad bit too &#8220;pumpkiny&#8221; so I may need to tweak the spices a bit before I share the recipe.</p>
