WIAW: Salads are in right now

I am officially in my 3rd and final trimester. How did that happen?

I’m super excited that I am closer to meet this little baby boy but part of me feels like I have so much I want to accomplish before he arrives. My To-Do list has gotten smaller but time is speeding up… ahhh.

 

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

Anyways, It’s Wednesday which is awesome and I’m linking up with the What I ate Wednesday Crew over on Laura’s Blog today to share my food journal with you from Monday.

Mondays are always busy for me. I rarely have time to sit down until Ava naps around 1:30 and by then, this mama can’t wait to put her feet up for a bit.

My morning started off with my usual 2 eggs, spinach with olive oil & potatoes.

I taught Group Power at 730am and for some reason my body was spent at the end. I didn’t go heavier in weights but I was sweaty and my muscles were wiped.

I refueled with a banana & avocado toast with scrambled eggs & a bite of a leftover quest bar (sad there wasn’t more)

Ava and I headed back to the YMCA around 10:15 for me second class. This girl was full of energy and basically ran in the building. She’s getting harder to keep up with these days.

After my class we headed home and decided to eat some lunch on our front porch.

It was beautiful out. I had 2 lovely lunch guests and we thoroughly enjoyed eating outside and getting some fresh air.

I ate a BBQ Chicken salad with romaine, cucumbers, tomatoes, broccoli slaw & honey mustard dressing.

This salad is amazing and I’m slightly obsessed with this honey mustard dressing by bolthouse farms. I have had this salad 3 times in the last week!

Salads are working so well for me right now and if I’m craving any healthy food I’m going with it.

I also had an orange.

I have a little story about that orange….. I pulled an orange out of the fridge and I swear I put it on the table. I’m pretty sure Ava hid it on me and I couldn’t find it anywhere. Luckily we had more in the fridge and I ended up finding it 6 hours later behind our radiator in the kitchen!!

My afternoon snack came on the earlier side. Probably because salads are temporarily filling if you ask me and there weren’t any carbs.

I decided to have a bowl of oatmeal which I haven’t had in a while. I had it with a scoop of peanut butter and strawberries on top.

Once Ava was up from her nap we headed outside to play and to walk Cooper. The weather was AMAZING and couldn’t have been more perfect.

Dinner was a simple fast meal. Pesto baked salmon, baked sweet potatoes, & asparagus. I ate a ton of asparagus before I took this picture!! oops.

Even though this picture isn’t pretty it was delicious and we all agreed the salmon was perfect.

Around 7pm I crashed. My body said no more playing, walking, exercising, and I sat myself on the couch. I’m thankful that Marc can take over when I’m really tired. My body can only go so far these days and I’m OK with that.

I watched a little bit of random TV and snacked on a greek yogurt with berries and granola plus some cheerios.

I’ve been trying to stay away from granola when it comes to my yogurts but it’s so good I can’t stop!!

  1. I love that you had oats as an afternoon snack. I rarely want them for breakfast, but they sounds so good mid-afternoon!

    • You should definitely have it as a snack its great. I prefer Eggs in the morning so I never think of oatmeal when I first get up!! :)

  2. Love salads for their lightness and mash up ingredients, especially around noon, but definitely always need a more ample snack an hour or two later. I’ve never even considered oatmeal for an afternoon snack, but it would be so perfect! Thanks for the inspiration on that one..

    • I love salads too. They are pretty easy to throw together for a quick meal and I’m really loving the Bolthouse farms salad dressings.

      You should definitely try oatmeal in the afternoon, I find it to be one of those snacks that keeps me full until dinner. I actually don’t prefer it at breakfast, I’m weird.
