2 Thanksgiving Celebrations

Monday is here again, but I’m happy to say that I thoroughly enjoyed the extra long weekend with my family!

I figured I would do a quick photo recap for you since I think you all know what we did… we ate a lot and we ate some more ;)

Thursday morning we headed up to Rhode Island around 1030am.

Our Rhode Island Thanksgiving was so much fun. We got to see all of Marc’s family and we couldn’t have asked for a better celebration.

On Friday we celebrated back in Greenwich with my family for Thanksgiving #2.

It’s TURKEY DAY!!!

HAPPY THANKSGIVING!  

Today we celebrate & give Thanks for “the blessing of the harvest and of the preceding year.”

I am THANKFUL that I get to share this special day with Marc, Ava, Cooper & Marc’s entire family up in Rhode Island.
Seriously guys, the smell of turkey & gravy is amazing, I love it and I cannot wait to dive in, how about you??

WIAW: LOTS of meals

Are you all ready for Thanksgiving tomorrow? I can’t wait!! I’m excited to see family and also devour some delicious turkey dinner.

I figured I would link up with the What I ate Wednesday group to share my food journal from Monday since I pretty much ate everything in sight that day!

Monday morning I woke up starving and the day pretty much continued on that note. My activity has been high lately so I’m guessing that’s part of the reason for extra hunger throughout the day.

WHAT-I-ATE-WEDNESDAY-NEW-BUTTON-PEAS-AND-CRAYONS

For breakfast I had scrambled 2 eggs, spinach & potatoes. This meal was filling and so tasty.

I headed out the door to go teach Group Power around 710. I left class feeling the need to refuel and I opted for a Cookie Dough Quest Bar, a banana, and mixed nuts. This was a well balanced snack and something a little different for me so I liked it!

After teaching my Fit For Life class, Ava joined me at my staff pot-luck Thanksgiving lunch at the YMCA. There were TONS of food choices and I filled my plate with a little taste of everything. (a couple wings, 2 pieces of chicken breast stuffed with stuffing and wrapped in bacon, corn, spinach, broccoli, mashed potatoes, mashed sweet potatoes, fruit, and a chocolate chip cookie)

I dug in and then realized I forgot to snap a picture so you get a partially eaten picture here… and this was also after Ava’s little hands messed everything up but you will just have to trust me that it looked pretty before ;)

The food was amazing and I left our luncheon wishing we had these pot luck buffets more often!

In the afternoon I did my usual computer work for a couple hours until around 230 my stomach was craving something sweet. I quickly toasted a piece of bread and topped it with peanut butter and sliced strawberries. If you have never had this before, please try it!

Dinner came on the early side and I ate around 5:15. I made a HELLO FRESH meal and I was so happy I did. We had Rosemary basted steak with creamed spinach & rosemary roasted parsnip fries.

Like I didn’t eat enough food throughout the day, at around 9pm my stomach was asking for more… Marc and I were watching the Patriots game and he decided to make me a game time snack.

Egg whites scrambled with tomato and avocado and a piece of naan. I know the naan bread was random but trust me when I say it completed this mini meal!!

Weekend Recap & Paint Party

I’m so pumped for a short week. I just love the holiday season and of course I really look forward to a good thanksgiving meal so lets make this week fly by so that I can stuff my face with some turkey ;)

This weekend flew by as usual, it was productive and fun.

Saturday morning I had an in home client that I trained and then we made a quick trip to Kohl’s to do some shopping.

In case you don’t know me that well, I’m not a very good shopper. I love having new clothes but I hate picking them out. Maybe it’s because I’m not stylish and I don’t know what I look best in. (workout clothes??)

In the afternoon on Saturday we headed to my friend’s daughter Lilly’s 4th Birthday party.

It was a painting party and I’m pretty sure all the kids had a blast.

Ava was SUPER excited to paint her letter A and she kept saying “Ava’s painting, Ava’s coloring.” It was really cute.

I had a great time watching her smile and have fun playing with the other kids.

Sunday I taught an early morning Boot camp class. I loved the workout I had planned and I was super excited that both Ava and Marc came for a visit. I think everyone enjoyed their company and distraction.

I was craving “not cooking” lunch after that workout and didn’t want any part of the kitchen so I ran to Citarella to grab a hot lunch from he hot foods bar. I chose Chicken Francese and Steamed broccoli with garlic and olive oil. It was SUPER tasty and satisfying.

I’m not sure if this picture does the food any justice, it was delicious and even better that I didn’t need to prepare it.

In the afternoon I got a haircut, went to trader Joe’s and then took Cooper to the dog park.

Things I’m Loving this week…

HAPPY FRIDAY!!!

I’m so happy the weekend is almost here. This week has been a good one, but all my activities are finally catching up with me. I’m looking forward to a relaxing Friday night with the family.

Since it’s Friday I am going to share some…..

THINGS I’M LOVING THIS WEEK:

I’m not really into veggies this week and my go to Veggie snacks are carrots and SUGAR SNAP PEAS. Gotta love these. They are crunchy & sweet. Ava even snacks on them :)

I’ve been on a roasted plantain kick, I usually make them after Boot Camp for one of my night time CARB rich snacks. They are super cheap at the grocery store and so easy to whip up.

On Tuesday night we ran out of time to cook dinner and I’m so happy I had these chicken meatballs to pop in the oven. They were SO TASTY and I loved the creamy mozzarella cheese on the inside. We all agreed they were yummy.

I got in some great workouts this week. The one pictured below was the calorie burn from after Group Power (I took the picture about 30 mins after class was over)

Ava’s hair is so naturally beautiful and curly but this is the WRONG mama to style hair. I hope she doesn’t look back at pictures and hate me because her hair is always crazy.

Healthy Pumpkin Bread (Gluten Free)

My pumpkin baking is in full effect and I am slightly obsessed with my new pumpkin bread/muffin recipe.

I have another Pumpkin Bread recipe on my blog that is super TASTY too, but it uses whole wheat flour and white sugar. I’m by no means avoiding those 2 ingredients but to be honest I wanted to experiment with new ingredients and flavors, plus I’m always looking for new ways to make foods I like!

I was in Stop and Shop last week and stumbled upon Brown Rice Flour. I was intrigued because I knew it was gluten free but I’ve heard great things about the taste and quality of Hodgson Mill brand. I didn’t hesitate and I put it in my cart. (it was also on sale and I wish I bought more)

My first thought was, I should make pumpkin bread. My body was telling me it needed pumpkin ASAP. After looking over several recipes and of course my own I came up with a short list of ingredients that were healthy, clean, & tasty. I had no clue how the brown rice flour would taste and hold up with this recipe, but once I mixed everything together I knew it was going to be good.

When my first loaf was done, I cut a slice for me & Marc. My mom and brother stopped by so they tried it too. We all went back for seconds and before I knew it the loaf was gone. Luckily Marc snapped this quick picture of it.

For my second loaf I added in chocolate chips, cause… why not?? Pumpkin + chocolate = AMAZING.

The second loaf was great, but I was still trying to master the cooking temperature and time on this bread. The ends cooked up super fast but the middle was a little under cooked. I didn’t care for myself because I could just toast up my slice and it would come out perfect but for my readers I needed to figure it out.

The 3rd round happened on day 3 except this time I made Pumpkin Muffins. You think I would be sick of this recipe by now! Even Cooper wanted some more. I was finally able to get the time right for MY OVEN, but of course yours may vary so its good to keep an eye on it in the oven when you are baking this bread.

So if I didn’t tempt you already, and you are looking for a healthy snack that will satisfy your sweet tooth and carb fix at the same time you should definitely give this a try. It only takes about 10 minutes to throw together and then 40 minutes later your house smells like fresh pumpkin spice.

PUMPKIN BREAD (gluten free, milk free)

Ingredients:

  • 1 1/4 cup Brown Rice Flour (I used Hodgson Mill)
  • 1/2 tsp Pink Himalayan sea salt (or regular sea salt)
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp Pumpkin Pie Spice
  • 3/4 cup pumpkin
  • 1/4 cup pure maple syrup
  • 1/4 cup coconut oil (melted) or butter
  • 3 eggs
  • 1/4 cup chocolate chips (optional) not included in nutrition
Directions;
  1. Preheat oven to 350 degrees
  2. combine all wet ingredients in one bowl and dry ingredients in another bowl.
  3. Mix 2 bowls together until evenly combined.
  4. Spray muffin pan with baking spray and evenly distribute mixture for 9 muffins bake muffins for about 15-18 minutes. (check at 15 minutes using a toothpick)
Serve warm!!

Makes about 9 little muffins: each serving approximately 184 calories, 8.2g fat, 24.7g carb, 1.8g fiber, 3.7g protein

If you want to make a pumpkin bread preheat oven to 325 and bake for about 45 minutes (every oven is different so monitor the loaf) Makes about 8 Slices: each serving approximately 207 calories, 9.2g fat, 27.8g carbs, 2.0g fiber, 4.1g protein
We did smear a little bit of whipped butter on top, it kept the bread moist!

Oh yeah I have a confession……I actually made these 4 times in 1 week (GUILTY) and….. I have the recipe memorized and…….. I need to buy more ingredients.
The last batch was a special request from my brother so I let him take 75% of the batch of muffins and I just saved a couple for us.

WIAW: A collection of food

Hello there! Sorry for my lack of post yesterday, they day got away from me and I didn’t actually sit down until 845pm.

I’m linking up with the WIAW crew to share some of my favorite meals & snacks over the last few days. To be honest I planned on sharing monday’s food journal but some of my food didn’t look picture perfect even though it tasted delicious so I opted to share some of my meals and snacks over the last 3 days.

Breakfast When someone else makes me breakfast it always tastes so much better right? Marc made me my favorite breakfast yesterday (2 eggs, sauteed spinach in olive oil and toast)

Snack my go to morning snack over the past few days has been oatmeal with almond milk, peanut butter and whatever fruit we have available (strawberries or raspberries)

It’s a filling and satisfying snack that I can’t get enough of.

Whoever thought to package energy bites was a genius and a millionaire. My lazy self has been popping these energy balls left and right this week. Even Ava loves them.

I’m skipping a lunch photo. Although my chicken marsala and chicken cutlet lunches this week were amazing, they were not photo worthy so therefore you just have to use your imagination.

Side dish On Sunday we did some food prep for the big Patriots vs Giants football game. Marc and I made this yummy salad as a side dish.

It has chickpeas, tomatoes, cucumbers, avocado, lime juice, cilantro, Salt & pepper. It was so healthy & refreshing. It definitely is a summer side dish, but Sunday’s weather called for something like this!

Dinner Speaking of Sunday we did some crockpot meal prep and had tons of leftover BBQ pulled chicken.

This was great to have to throw on a sandwich or salad for a quick dinner this week.

This is my 4th batch of pumpkin muffins and I’d be lying if I said I didn’t eat one or 2 of these every day for the past week ;)

Potty Training & Patriots

Hello Monday.

Wow, what a weekend it was. I’m not going to get too many details about my weekend because all of my daytime hours were spent teaching Ava how to use the potty.

Ava is currently 23 months and she has shown signs of potty training for several months now. With a busy weekend schedule the past few months we were waiting for an appropriate weekend to put some training time in.

We used this 3 Day Potty Training Method by Lora Jensen. I will write a separate post about it soon to give you more details, but lets just say Friday we had about 15 accidents, Saturday we had about 10 and Sunday we had about 5.

I doubted the “method” numerous times, but we never gave up. I’m a very consistent person and Marc is very persistent so we were able to help each other out all weekend. It was a team effort and I think we are winning.

Ava is making SERIOUS progress and I’m so proud of her. By Sunday night Marc and I both agreed that it seemed like Ava aged about 5 years over the weekend. I always thought she was on the mature side, but she showed us even more how she is a quick learner by picking up on her potty training in such a short amount of time.

Speaking of Sunday night, I actually got to watch the Patriots game. (not every second) But it felt amazing. I know that sounds silly but I really enjoy football and it seems like this season I haven’t been able to catch the whole game.

It’s either on WAY past my bedtime, we are out of town, or we don’t get the game. It almost felt like a playoff football game because it was such a nail-biter and I’m so happy the Patriots pulled out a win.

Things I’m loving this week.. Costco Edition

I’m sure you have all heard of BJ’s or Costco before, well we have a Costco a few miles away from our house and I look forward to my trips there.

It’s one of my dad’s favorite stores he goes there every week. I guess I know why he likes it so much, they always have new products both food and “toys” to look at and who doesn’t like new toys and food to try??

THINGS I’M LOVING THIS WEEK: COSTCO EDITION

After roaming up and down almost every aisle in the store, I had to keep my hands on the cart to hold back from purchasing things we didn’t NEED. My WANT list is very long but I had to focus on the essentials.

Besides the basics like eggs & milk (because we always seem to need those 2 things) I knew I wanted to buy some fruit. I am always craving fruit and Costco often has deals on huge containers of berries, those are my favorite. I ended up buying blueberries and raspberries but they are almost gone. Sorry no picture.

Costco sells Bagged salad mixes that come with dressings & toppings!!!! Of course that was getting tossed into my cart. I can’t pass up on a meal in a bag, especially one that’s healthy. This bagged mix has Cabbage, Carrots, Cilantro, Cashews, Almonds, Sesame seeds, & an oriental dressing. I can’t get enough of oriental food this past week, bring it on.

Aidell’s Chicken Meatballs were something else that caught my eye. I have purchased these before at Stop and Shop in a small package and we loved them. When my dad asked if we wanted to split a big package I was all in and already planned to have them for dinner the next night. These meatballs have NO preservatives, no hormones, and they are gluten free for those that are looking for that option. They were perfect for a weeknight quick dinner and the taste does not disappoint!

Mixed nuts of course with salt. I never get unsalted nuts, I feel like SALT brings out so much flavor in EVERY type of food, especially in nuts. These are awesome to have around the house because Marc, Ava and I snack on them daily and the container lasts a lot longer then the smaller cans you get at the regular grocery store.

Every once in a while I need a little crunch in my life. A few years ago I became obsessed with CRUNCHMASTER crackers. I could only find them at random stores and now I see them all the time. I remember sending Marc to the walmart in stratford on his lunch break to hunt these bad boys down. They are crunchy, nutty, tasty and healthy and COSTCO sells them in a giant box that could last your an entire month.

We also found the BIGGEST bag of Skinny Pop. Um, you know I love popcorn and this one takes the cake on taste, nutrition and pure goodness. Although I prefer to make my own popcorn, having some on hand is awesome. I crave salty snacks a lot and this popcorn makes the cut, I’m a fan!! I also love that this bag is practically the size of Ava.

Ava’s birthday is coming up, so when we were in the toy aisle I saw this awesome Minnie Mouse house that I couldn’t pass up. I said to my dad should I get it, he said yes don’t wait until Christmas or her birthday, get it now! So I added it to our cart and Ava’s eyes LIT up. She said “mommy open!”

I made the mistake and said we can open it when we get home. This girl is so smart, literally the second we got home she said “Mommy OPEN!”

Ugh I’m a sucker. So much for a birthday or christmas present! Remind me next time not to shop with her.

She loved it, and she even gave me a big squishy face smile. Each morning she woke up this week she got excited to play her Minnie house “new toy” as she calls it.

It week was GREAT and I’m looking forward spending some quality time with my family this weekend!!!

What’s Up With the U.S. Snacking Obsession?

I read an interesting article on IDEA Fitness website the other day titled What’s Up With the U.S. Snacking Obsession?

Before even reading the article I immediately thought to myself, I’m guilty, I’m a snacker!

I didn’t know why I felt guilty, for the most part I snack because my stomach is telling me I’m hungry and I need food. On a day to day basis I usually eat 5-6 meals and my snacks come from healthy foods: fruit, veggies, nuts, yogurt, cheese, protein shakes, oatmeal, etc.

Don’t get me wrong, there are definitely times when I mindfully snack while watching my favorite TV shows like Grey’s Anatomy and Scandal.. I’m pretty sure Olivia Pope promotes snacking on Popcorn while watching the show, so clearly I need to follow her lead.

Now.. back to the article. One of the biggest takeaways for me was this quote:

“In the morning, we may weigh the value of nutrition but we’re much more motivated by convenience. Evening and late-night snacks reflect a desire for reward and indulgence. Morning and afternoon snacks are needed to provide energy, while energy is not a big factor in the evening (HFI 2012).”

I do agree that I use my morning and afternoon snacks for energy and because my body NEEDS food. I’m definitely guilty of sometimes eating a night time snack simply for pleasure but I would have to say that 90% of the time I’m truly hungry.

I also found this interesting statistic:

“Government surveys have estimated that 24% of the calories in adult Americans’ diets come from snacks. Relative to that average, snacks account for

  • higher proportions of alcohol, carbohydrates and total sugars;
  • similar proportions of vitamin C, vitamin E, calcium and magnesium; and
  • lower proportions of most other nutrients.”

Most people tend to snack on “packaged & processed” snack foods. I totally understand this because ready to go snacks are convenient and don’t take any time to prepare, BUT those are the snacks that don’t supply you with natural energy and they usually have minimal nutrients.

I have learned to keep my days balanced with the right fruits, veggies, carbs, proteins, fats & fiber. The more balanced your meals and food choices are, the healthier you will feel & look!!
