I am bringing to you a What I ate Wednesday post today. (really it’s what I ate yesterday and maybe I should’ve titled it that way!) I was overly pleased with my first day doing the Paleo, I never was overly starving except for after boot camp!
I had sauteed spinach and pan fried potatoes in Coconut Oil and topped that with 2 over easy eggs. It was SOO Good, you need to try it.
For mid-morning snack I ate a banana, a homemade Larabar, and some baby carrots! Odd combo but the carrots came a little while later.
Lunch was some leftover grilled chicken with grilled veggies over a spring mix salad with a vinegarette dressing. I also had a baked Sweet Potato with olive oil & salt. Super healthy but filling!
I found myself eating an afternoon snack earlier, I guess I wasn’t really too full from that salad! I didn’t have almond butter so I had an apple with some mixed nuts on the side.
I made a crockpot PALEO Turkey & Bison chili for dinner. I will post the recipe this week. I liked it a lot!
After Boot Camp Marc made some Pan Fried Tostones (plantains lightly fried in coconut oil with sea salt) So sweet and salty!
(Missing from the pics was some plantain chips that I snacked on!!)

That crockpot chili looks good! Congrats on trying paleo, it’s such a great way to eat and live! I’m primal (aka lactopaleo) which is paleo + some dairy. I’ve been doing it for 4 months now and feel amazing

Hi Danielle! The crockpot chili came out great! I have done Paleo before but not long-term. Congrats on getting to 4 months, that is awesome! Do you find that you crave dairy if you eliminate it from your diet? I do miss a little cheese & milk, but I have found almond milk to work okay right now! I am interested to see if I feel any different after 2 weeks!

Yum! Looks like my type of day! I’ve been eating Paleo for two years now and love it! Sweet potatoes roasted with coconut oil and sea salt are definitely one of my favorites. As are plantains sautéed in coconut oil and cinnamon then topped with coconut with coconut butter. AMAZING!

Hi Giselle! I am slightly obsessed with both sweet potatoes and plantains! They have become a staple in my diet I haven’t tried plantains with coconut butter & cinnamon that sounds yummy! Do you have any other snack ideas? I am always looking for new creative snacks.
