Halloween and Weekend Recap

Hiiii

I woke up bright and early this morning at 5am with Ava because she hasn’t quite adjusted to the time change yet. Luckily once I got out of bed I wasn’t as tired as I thought.

How was your Halloween weekend?

I can’t say ours was amazing but I did enjoy some of it. Friday night we dressed Ava up as a lady bug.

She was kinda confused as to what was moving around on her back and didn’t understand they were wings but she still looked cute crawling and walking around in her costume.

We didn’t really have an adventurous night trick or treating because she had a bad cough but we got to hang out and have dinner with my family which was nice.

Marc also carved this pumpkin skeleton!

Saturday morning we woke up to Ava wheezing. She seemed very short of breath. I knew the Doctors office wasn’t open yet so we entertained her until I could call at 8. They told us to come right in, it sounded like Ava had something. I hated seeing her struggle to breath and I had a feeling it was bronchitis again. She has had it before and it was the same time of rapid breathing the Doctor talked about last time

We were so lucky to be the only family at the Doctor’s office and we were in and out in about 30 minutes. Sure enough Ava has bronchitis but she also has a touch of asthma. This just means she is more susceptible to bronchitis whenever she gets a viral infection :(

So Saturday wasn’t that fun!!t Ava took a couple long naps so we were able to run a bunch of errands but that was about it. The day once again revolved around keeping Ava happy and comfortable. Poor kid can’t catch a break!

My weekend finished off on a better note. Sunday we got to celebrate my sister in laws baby shower.

And we enjoyed a delicious brunch.

It was a beautiful shower and I couldn’t be more happy for my brother and his wife!!

Happy Halloween & Pumpkin Seeds Recipe!!

HAPPY HALLOWEEN!!!

I am sure there are a lot of excited kids out there today. They are probably even more pumped that Halloween falls on a Friday. Tonight we will be celebrating Ava’s first Halloween. I can’t say we are going trick or treating but we will be visiting a few houses including my brother’s and my parents!

Yesterday I posted some Healthy Halloween Treats. In case you missed them, they are quite fun and easy to make.

If you haven’t carved your pumpkins yet, I highly recommend you do that today.

Last night after Boot Camp class I baked some pumpkin seeds as a night-time post workout snack! They fixed my salt craving and packed a nice crunch!

Salt & Pepper Pumpkin Seeds

1 cup pumpkin seeds rinsed and pat dry

1 tbsp of canola oil

salt & pepper

Toss the pumpkin seeds with oil, and place them on a baking sheet. Sprinkle evenly with salt & pepper. Bake your pumpkin seeds at 375 degrees for 5 minutes or until golden and crispy on top! Remove from oven and sprinkle with more salt!

I used my toaster oven so they cooked up super fast. Make sure to keep an eye on them so they don’t burn!!

Healthy Halloween Treats

Can you believe Halloween is tomorrow?!?

I really can’t, but I am super excited to see Ava in her Halloween Costume.

We all know the staple with Halloween is candy and more candy. Fortunately for me I’m really not a candy girl. Growing up my favorite was Reeses because as most of you know I love peanut butter. We also had M&M’s around a lot because my Mom loves them, so I guess I naturally like those too.

After a night of trick or treating, I would pretty much let my brothers and my dad eat all my halloween candy . I was never the kid that sat there and ate a million pieces, I would probably only have one or two and be over it.

Obviously you guys know I have to put a healthy twist on Halloween, it’s just what I do!! ;)

I was looking at making some fun treats that were kid and adult friendly but also healthy. Ava doesn’t eat chocolate but she does love bananas, so I decided to make these Ghost Bananas. Aren’t they cute?? They do have chocolate chips as the eyes and mouth but I took them out when she ate her breakfast.

Clementine Pumpkins… These pumpkins look adorable and they are SO easy to make!

To make them, Peel your clementines or tangerines and place a small celery stick inside! They would be really cute to add to your halloween party!

and for all you chocolate lovers out there, last night I made these Reeses Protein bites. (These are slightly addicting so watch out!!!)

Reeses Protein Bites

inredients:
1 tbsp cocoa powder
1 tbsp peanut butter
1 tbsp honey
1 scoop Vanilla whey protein powder (or Chocolate)
1/2 cup oats
2 tbsp water
Directions:
Mix ingredients with a spatula. Divide into 8 balls and chill for 30 minutes or eat right away :)
(Note: if they are still dry add a little more water)

WIAW- I wasn’t organized

Being away for the weekend left my fridge empty for days. We had literally no food in our house, and it’s my fault! I swear I went to the store on Monday to get some of the basic necessities but they were gone instantly.

It’s time to really go shopping Kelly.

I am linking up with Jenn for another What I ate Wednesday post. I can’t promise that you guys will be impressed or pleased with my food choices because every time I opened the fridge I was at a loss for what to eat.

Here goes nothing:

Breakfast was 2 eggs and 2 pieces of toast with a side of pineapple

and a french vanilla coffee! It didn’t fill me too well, and I ended up having a banana shortly after I trained my first client.

Like I said earlier I had nothing planned or organized, so a mid morning shake was the best option for me. It was a Purium shake which at least got me some healthy nutrients.

I also had some trail mix with the shake.

Do you ever have those days when you wish someone gave you food to eat? I didn’t feel like making any decisions. I decided to get a sandwich to go from Garden Catering. I got a GCGV Wrap (grilled chicken and grilled veggie wrap, the veggies were mushrooms & peppers). It hit the spot. There’s something about this sandwich that I love.. I think it’s that I didn’t have to make it! It was actually so messy that I ate it with a fork and knife and didn’t eat the tortilla because it was too soggy, but I still loved it.

I had a sweet potato and an apple with my sandwich.

I wasn’t that hungry in the afternoon but I wanted a little something. Thank goodness for greek yogurt and strawberries. This was perfect.

Guys I finally hit up the grocery store before dinner and yes I made something. It wasn’t too wild but we had delicious Beef Tacos. I literally whipped them up in 20 minutes.

I would’ve eaten 10 of these tacos if I didn’t have Boot Camp to teach!

Post Boot Camp I opted for a Cookies n Cream protein shake and a couple clementines!

I guess all in all my day finally came together, but I wish I had some amazing meal to share with you.

20 Minute Upper Body Blast

In case you missed my posts yesterday. Check out PART 1 and PART 2 for some beautiful pics of my best friends wedding.

I was super impressed that I squeezed in a workout the morning of Danielle’s wedding up in Newport. I guess for me when I have something on my mind I get it done.

The Hyatt gym was small but had some great pieces of equipment. Without a game plan in mind, I decided to do a quick upper body workout since I knew I would be on my feet and dancing all night.

 My workout left my arms shaking but it gave me energy for the day! Here’s the workout:

Newport Wedding Weekend Recap Part 2

 Saturday I got up bright and early. I am used to getting up early for work and because Ava usually wakes us up early on the weekends. Marc and I took advantage of not having kids and went out to breakfast at Corner Cafe in downtown newport!

The place was so cute and the food was amazing. I had a delicious veggie omelet with some herbed homefries and side of fresh fruit!

I would go back in a heart beat :)

I loved that they had over sized coffee mugs, Marc and I were in need of coffee!!
Not having to find a babysitter was pretty clutch this weekend! I was able to hit up the hotel gym for a quick workout before we had to start getting ready for the wedding.

Shortly after my workout I headed to the Bridal suite to hang out with the bridesmaids for the fun day of festivities!

We drove around newport in a trolley bus to take pictures. The Trolley was clearly a blast!

The cocktail hour began at 5pm and we were able to mingle with the guests and enjoy some appetizers & cocktails outside overlooking the water!! It was awesome.

At around 6pm the main reception began! The bridal party entered in a big Conga Line!!

Of course we ate some delicious food & danced a ton. It was an amazing night. It felt like Marc and I were on a weekend long date night it was a blast.
I love hanging with my friends and better yet getting to be with them all weekend!! :)
Butttttttt we couldn’t wait to see our little Ava.
I anticipated a big old smile on her face upon my arrival but she looked at me like what are you doing back already.. and then about 10 seconds later came crawling fast towards me!!
Congrats to the new Mr. & Mrs. Murphy!!

Newport Wedding Weekend Recap Part 1

Newport was such a blast this weekend!! There are so many pictures and updates that I broke the weekend up into 2 parts so that I don’t overload you guys with too much at once!

Danielle & John’s Wedding Weekend Part 1

Friday morning we left our house bright and early to bring Ava to Marc’s parents house in Rhode Island since she was staying there for the weekend while we were at the wedding. This was our first full weekend away from Ava so we hung out for a little and got her settled before we finished the rest of our drive to Newport.

We arrived at the Hyatt Regency Hotel in Newport around 3pm and got checked in. We headed to our room to get changed so we could head to the rehearsal at the church which began at 5pm.

The rehearsal was short and sweet and everyone was excited to head to the dinner party after. We took a shuttle bus to The Landing restaurant which was literally a mile from the Hotel for dinner.

It was a lovely restaurant that is located dockside at the Bowen’s Wharf in Newport. The party room had tons of glass windows that overlooked the gorgeous water and Newport Bridge!

Things I am loving lately…

Good morning and Happy Friday!! 

We will be heading to Newport, Rhode Island very shortly for my best friend’s wedding, but first I have a quick post of some things I am loving this week!

I am all about simplicity with my food lately. My life has changed with Ava around and I don’t have time to spend hours in the kitchen right now. This Upside Down Shepherd’s pie came out fabulous this week. (I made a few changes to the recipe, I used 4-5 tbsp of regular jarred pasta sauce instead of tomato paste, and I added fresh parsley.. it was GOOD!)

For the past couple of weeks I have been taking these BCAA’s before some of my intense workouts. If you don’t know what BCAA’s are they are Branch Chain Amino Acids that can be used to improve exercise performance and reduce muscle breakdown. For more information check out this Supplement Guide. I have definitely seen and improvement in my exercise endurance during my time taking them!

I am not a big clothing shopper believe it or not. I actually wish I was, but every time I go to the mall searching for specific things I NEVER find them :( So I have been doing some online shopping and surprisingly have been enjoying it. I love Old Navy’s new line of workout motivation gear and I find myself wanting to buy all their comfy workout tops! You should definitely check them out!

 Speaking of avocado. I made a cucumber, tomato, & avocado salad to toss on our turkey burgers the other night, it was pretty darn good. Marc was mad that we didn’t have more of it.

I made these 2 Ingredient Pumpkin Oatmeal Cookies. They are healthy and tasty!

Now we are off to Newport for a long weekend…. I can’t wait. I will be sure to have Marc take lots of pictures during the ceremony so you can see the beautiful bride and of course our bridesmaid dresses!!

2 Ingredient Pumpkin & Oatmeal Cookie!

So once again I had a leftover can of pumpkin in the fridge. I was craving carbs the other day, so I decided to try out an oatmeal cookie recipe that I thought of. It is similar to the banana bread cookie recipe I made a while back, but this one uses pumpkin!

I had no idea how the cookie would come out, or taste, but I Marc and I enjoyed them. They are even kid & dog friendly (minus the chocolate). These cookies have no added fat so if you are looking for more substance I would definitely add some crushed walnuts.
Now, I am sure you are probably questioning how a 2 ingredient cookie works, so check it out…
2 INGREDIENT PUMPKIN OATMEAL COOKIE
Ingredients:
1 cup Pumpkin
1 cup Quick Oats
Directions: 
Combine ingredients in a medium size bowl. Here is the fun part. Add in your choice of fix-ins. I added 1/2 tsp cinnamon, 1/2 tsp pumpkin pie spice, and 2 tbsp sprinkle of mini chocolate chips on top!

You could also use nuts, raisins, almond butter, etc.
 
This recipe should make about 12 cookies. Scoop out the dough onto a baking sheet into 12 even cookies. Bake at 350 for about 15 minutes or until cooked through.

 These Pumpkin Oatmeal Cookies are best served warm and right out of the oven!
Per 3 cookie serving, approximately 98 calories, 3.8g fiber, 3.4g protein (this is including chocolate chips)

WIAW: Almost All Paleo

Happy Hump day!

I am linking up again with Jenn to share What I ate! I challenge you to join in next week.

I was home sick with Ava on Monday so I literally had a lot of time to kill. After I taught Group Power that morning I baked, I cooked and did a lot of other random things that I normally don’t get to do on a Monday. Lets just say my extra food prep on Monday made my life easier for the week.

For Breakfast I had a leftover baked potato with spinach and 2 over easy eggs on top. It seems like on Tuesdays this breakfast is a staple… so get used to it. It was perfect and SO filling.

Around mid-morning my stomach was rumbling and I opted for an AMRAP bar

and a banana. YUM! This snack did a great job holding me over until lunch.

I chose some leftover Parmesan & lemon crusted Tilapia for lunch! I seriously don’t think I can get sick of this fish. It is light, refreshing and fresh parsley is amazing.

 I also had some leftover brussel sprouts & zucchini and a granny smith apple!

My afternoon snack came a little earlier. I had some baby carrots, a pumpkin & oat cookie (recipe to come),

My dinner was a throw together quick meal. A turkey burger with cheese topped over baby spinach, tomatoes, avocado, cucumburs, & brown rice. With a sweet potato on the side!

and then I made a batch of roasted plantains that Marc and I snacked on while watching some TV! It was a great balance of Carbs & Protein for a post workout snack :)

I am super pumped because today is actually like my Thursday!!  We are heading to Newport early Friday morning for one of my best friends weddings! I can’t wait.
